How to Use up Leftovers
My husband doesn’t like leftovers, so I either freeze them for a busy day or turn them into a new dish.
When You Make Way Too Much!
I prefer to call it “cooking ahead.” If it is something that freezes well, I immediately freeze it in a round Rubber Maid container that just happens to be the same size as my pot. The one day when I don’t feel well or don’t have much time, I get it out of the freezer, put it in the pot, and heat it up. He never knows.
Using Leftovers in Stir-Fry or Fried Rice
I freeze leftover chicken, pork tenderloin, ground beef, and roast for use in stir fry or fried rice. I also make extra rice and freeze it for use in fried rice. Then when I want something fast and delicious for supper, I pull out some frozen meat, frozen rice, and (uncooked) frozen onions and vegetables and throw them all in the pan (not all at one time), along with seasonings: garlic, red pepper, soy sauce, etc., for fried rice; teriyaki sauce for stir fry. Southen Living once had a good article and recipe on using leftover meat in fried rice.
Soup
And, of course, you can use most leftovers in soup.
